yummy tuna

I have to share this with everyone because this sandwich was truly exquisite. I made a tuna fish sandwich janelly style. A lot of people just like tuna fish with nothing but mayonnaise. But why add just mayo when you can add everything but the kitchen sink for a real gourmet feel. First you must start with solid white albacore tuna fish. To use any other type of tuna fish would be a mistake. You can almost guarantee no cartilage or bone with solid white tuna and that makes the sandwich much more enjoyable. Well let me tell you what i put in this sandwich to make it so delicious. The ingredients might be a little weird, but you can't knock it till you try it. Trust me.

"Janell's tuna delight"

2 - 3 cans of solid white tuna fish
1 tbs of mayo
1 tbs of spicy brown mustard
2 tsp of lemon juice
1 small box of raisins
1 small apple diced small
5 Roma tomatoes quartered
1/2 a yellow pepper diced
3 tbs of pickled Artichoke hearts
1 tbs of diced onion
salt and ground pepper to taste
1 tsp of fresh chopped cilantro
mix all the ingredients together

Next, toast your favorite bread. Don't make the mistake of using ordinary white bread for this treat. It would be pointless to do so. Instead pick a bread that is thick and soft, but yet crunch when toasted. Homemade whole wheat bread is perfect. Load your bread with the tuna mixture and top it with a spring salad mix. Choose a mix that preferably has arugula in it. the taste is beyond delicious and blends perfect with the tuna.
